Spice and vegetable markets offer color and wonderful scents. The blue substance in the last photo is indigo, used as a dye rather than a spice. Also, check

These olives are fresh and at a road side stand, JJ. There were cured olives to be had everywhere. Our guide in Jordan joked that while there was no petroleum, Jordan did have oil--Olive oil!
