Focus on Food in Jordan

In Egypt, most meals were taken on board the cruise ship or in hotels which meant lots of Western-style cuisine. But, in Jordan, there were more opportunities to eat in local restaurants. In this post, you can see an oven (fired by natural gas or propane but in the wood-fired tradition). The chef is making lamb meatballs some of which ended up in excellent lamb kabob sandwiches. He also made a simple flat bread that was absolutely excellent. Earlier, on the road to Wadi Rum in Jordan (think Lawrence of Arabia when you think of Wadi Rum), we stopped at a "rest house" where we ate a kind of pizza-like bread with olive oil, cheese or zahtar, an oregano and sesame topping.
